BEEF
BRISKET
Our brisket is slow-smoked over a hickory fire. We do not add
any seasoning, we simply infuse the fine aroma of hickory
smoke into the brisket in a moist overnight smoking process.
A perfectly smoked brisket is the pride of any Texan and
is sure to be the pride of your table as well!!!
PULLED PORK
Hand pulled from the most succulent part of the hog. Lightly
seasoned and sauced our way. Slightly sweet and super moist.
Our pulled pork is sure to please!!!
PORK RIBS
We give 'em a good rubbin' with our own blend of rib-rub. Slow-smoke
'em over a hickory fire and dunk 'em in our own rib baste at
the end of the smokin' process. Our pork ribs are toe-curlin'
good!!!!
POLISH SAUSAGE
Our special blend of spices in our polish sausage along with
its 60-40 beef and pork blend make it a unique treat. We slow-smoke
it over hickory to give it that special Mike Anderson's flavor!!
TURKEY BREAST
Our turkey breast is the BOMB! If you've never had a hickory-smoked
turkey breast sandwich, ya just ain't livin' right!!!
HOT LINKS
Our special blend of spices along with a 70-30 beef and pork
blend make our hot links a pleasure. Just enough heat to get
yer tongue dancin' around!!!
HAM
Our hickory-smoked ham is awesome on a sandwich, on a dinner
plate, or layin next to some breakfast eggs and sausage. You'll
never go to the deli counter again!!!

OLD SCHOOL
BBQ BEANS
This type of bean concoction is the bean-staple of any BBQ
joint in Texas. The way we fix 'em is to start with large navy
beans. We drain the suckers completely, dump in a simmered
down roux of Mike's Original BBQ Sauce, molasses, brown sugar,
sauteed onions and bell peppers, our special blend of seasonings
and last but not least we'll chop up some brisket and sausage
and chunk it in. Ya can't not love the darn things!!!
GARLIC AND CHEDDAR SMASHED POTATOES
We start with russet potatoes add in some some good ol' whole
milk, then we smash 'em with skins-on and add our special blend
of garlic, salt, black pepper and our own cheddar sauce. These
ain't yer mommas bland mashers!!!
JALAPENO PINTO BEANS & RICE
Our pinto's ROCK! We boil off some pinto's with our own special
Zazzoo Seasoning. Add some good 'ol white rice, toss in some
pickled jalapenos, charred brisket tips, and a bit of Louisiana
style hot sauce. Tender tongues should steer clear!!!
GREEN BEANS GONE RIGHT
Cut green beans boiled in our Secret Goodie
Powder. We toss
in taters, sauteed onions, and smoked ham tips. If ya like
steamed veggies ya don't need us!!!
CHEEZY CORNBAKE
Our cornbread concoction with sweet corn, grilled sweet onion
& pablano peppers. We toss in some sour cream and bake on a mound
of cheddar cheese!!!
THIS STUFF IS GOOD EATS!!!
FRIED OKRA
Our take on a Texas favorite. We double-bread it, deep-fry
it to a golden brown and toss on some Zazzoo Powder. Mike calls
this stuff Texas Popcorn. Its scrumdiddleyicious!!!
FRIED POTATOES
We wedge-cut 'em, leave the skins on, deep-fry 'em and dust
'em up with Mike's Zazzoo Powder. Everybody loves an old-school
fried tater!!!
SOUTHERN
TATER SALAD
We smash boiled russet taters (skin-on), add in our special
seasoning, sweet relish, yellow onions, red peppers, kosher
dill pickles, mayo, and lay heavy on the mustard. This stuff
is the perfect compliment to a well rounded Texas Flavor Sensation!!!
DILL TATER SALAD
We smash up some #2 taters (skin-on), toss in some love powder,
fresh dill weed, dill pickle relish, red peppers, and some
good 'ol mayo. If ya like dill, you'll love it!!!
GARLIC SLAW
We put a coarse shred on the green cabbage, red cabbage, and
carrots. Our own blend of salad dressing, vinegar, garlic,
and sneaky spices get tossed in for grins!!!
BLACK-EYED PEA SALAD
Some folks call this Texas Caviar. Black-eyed peas, onions,
tomatoes, corn, cilantro, and our own Italian dressing. Great
as a side dish or a dip...just don't wimp out, use a good salty
corn chip for dippin'!!!
CUCUMBER & ONION SALAD
Trimmed cucumbers, sliced tomatoes, red onions, oregano, garlic,
extra virgin olive oil, and vinegar. Fresh, tasty, and good
for ya!!!
OLIVIA'S DEVILISH EGGS
We can't say too much about 'em, but there are jalapenos involved.
They'll make an angel out of ya!!!

CLASSIC BAKED
POTATO
We start with a big 'ol tater and toss in butter, sour cream,
sharp cheddar, green onions, real bacon. Good Eats no matter
how ya look at it!!!!
MONSTER BBQ BAKED POTATO
We take a 2 pound spud, stuff it like our CLASSIC and top it
with a handful of yer choice of any of our boneless smoked
meats. This sucker will slow ya down a bit!!!
SPUDZILLA BBQ BAKED POTATO
Twice the meat of the Monster BBQ Baked Potato! Plan for a nap afterward!!!
BBQ BEAN BAKED POTATO
We take our Classic Baked Potato and ladle up a bunch of our
own BBQ beans on top. I promise you'll be thinkin' about us
all day!!! (...and so will yer friends)
HOUSE SALAD
We start with a big oval plate of iceberg lettuce, shred in
a 'lil red cabbage an carrots. We dress it up with the basics'red
onion, sharp cheddar, real bacon, and cayenne pepper croutons.
Ya'lls dressin' will be on the side. We serve Ranch, Honey
Mustard, Italian, and Blue Cheese. Hey at least we don't give
in to the push for fat-free dressings. (they just ain't good!!!)
SMOKEHOUSE SALAD
Our house salad topped off with a good handful of any of our
boneless smoked meats. There ain't nothin' like a good brisket
salad!!!

GRANNY'S APPLE COBBLER
Ya'll will love our version of this southern treat, down here
in Texas we toss the finest vanilla bean ice cream we can
find on top and grab the biggest spoon that fits in yer mouth!!!
OLD FASHIONED CHOCOLATE CAKE
Three layers of moist chocolate cake, three layers of chocolate
icing, and chocolate shavings on top. Chocolate! Chocolate!
Chocolate!
SUNSET CARROT CAKE
Two layers of moist, rich carrot cake. Walnuts, coconut, and
carrots topped off with a cream cheese icing. Delicious!!!
HOT CHERRY-PINEAPPLE PAN PIE
Tons of cherries, crushed pineapples baked with a spiced golden
brown yellow cake crust on top. Ya can't put yer spoon down!!!
BOURBON PECAN PIE
We take this southern favorite and infuse the flavor of fine
Tennessee bourbon into the pie filling. Yeeehaaaawww!

MIKE'S BACKYARD
BBQ SAUCE
This stuff is what BBQ sauce is supposed to be! We figured
out a long time ago that the 5 keys to a great BBQ sauce were:
1 - Its gotta hang on to the meat.
2 - It must meld sweet and spicy seamlessly.
3 - It must be both unique and complex in taste.
4 - It must be the perfect companion to hickory smoke.
5 - ITS GOTTA BE TOP-SECRET!!!!!!!!!
Trust me on this one, this stuff is the ABSOLUTE
BBQ SAUCE BOMB!!! Made with all natural ingredients,
no sugar compound crap and absolutely no preservatives. When
it comes to sauce its all about the love!!!
MIKE'S JALAPENO
BBQ SAUCE
Using Mike's Backyard BBQ Sauce as a base we infuse a 4 pepper
blend into the roux to give it a big ol' kick. If ya like it
hotter than most, this stuff will get 'cha grinnin'!
MIKE'S ZAZZOO
POWDER
Mike's blend of 14 spices, perfect for pert-near anything.
We can't tell ya whats in it or we'd have to take ya down to
the river for a one-way walk!!!
MR.T'S HABANERO
SALSA
The ol' motor scooter will even run better if you give it some
of Mr. T's salsa. We've even scared off the local sheriff with
it!!!
